Ottogi's traditional noodles are made using the multi-water ripening noodle-making method.

What is the polyhydric ripening noodle-making method?

This is a noodle-making method that strengthens the gluten of the flour by adding a sufficient amount of water during the kneading process and aging the noodles at an appropriate temperature for a long time to make them chewy and soft.

Ottogi's old noodle Somen (thickness 0.95-1.2mm) has clean and chewy noodles that go well with all noodle dishes.

It is a 10 times concentrated product and can be used instead of soy sauce in dishes such as oil pasta, braised soybean paste, and japchae to enjoy a mild, savory taste.
