Ottogi's traditional noodles are made using the multi-water ripening noodle-making method.

What is the polyhydric ripening noodle-making method?

This is a noodle-making method that strengthens the gluten of the flour by adding a sufficient amount of water during the kneading process and aging the noodles at an appropriate temperature for a long time to make them chewy and soft.

Ottogi's old noodle Somen (thickness 0.95-1.2mm) has clean and chewy noodles that go well with all noodle dishes.

다가수 숙성 제면법이란?

반죽과정 중 가수량을 충분히 하여 밀가루의 글루텐을 강화시키고 면을 적당한 온도로 오랜시간 숙성시킴으로써 면발을 쫄깃쫄깃하면서도 부드럽게 해주는 제면법입니다.

오뚜기 옛날 국수 소면(굵기 0.95-1.2mm)은 깔끔하고 쫄깃한 면발로 모든 면요리에 잘 어울립니다.
